Simple Green Thai Curry

It’s actually green, don’t know why it came out looking red in the picture

What You’ll Need

  • 1 large chicken fillet diced
  • 1 tin of coconut milk
  • 1 clove of garlic chopped
  • 1 chilli pepper sliced
  • Half a green pepper
  • Half a red pepper
  • Half an onion
  • 1 Tbsp of honey
  • Basmati rice
  • Salt for seasoning
  • Curry powder

What You Need to is…

Wash the basmati rice in warm water and put on the cooker to cook till soft. Make sure you cook it on a low heat and add water if you notice it drying up before its soft enough. Add a pinch of salt for taste.

Heat about a tbsp. of oil in a pot and add the onions, garlic and chill pepper and stir for about 2mins. Then add in the chicken and stir until its cooked all the way through. Add some salt to season and two shakes of some curry powder.

Add in the chopped peppers and stir for 2mins then add in a tbsp of curry paste and stir for another 2mins.

Lastly add in the coconut milk and a tbsp and a half of honey then let it all simmer for 10mins on very low heat and you’re done! Serve with the basmati rice and enjoy! πŸ™‚
